A snapshot of what local diners frequently mention about this location.
"Stopped by and had 2 appetizers plus the beef brisket w/tendon in original broth. Super good with added kimchi! Big bowls too! Perfect meal for a cold night. Excited to come back"
"This place is fantastic and genuinely worth the visit. Truly the best ramen I’ve had in a long while and Jason was the chillest guy ever!! Shout out to this place for opening back up and letting us try their delicious food! (I recommend the beef brisket ramen, that stuff is so flavorful!)"
"Hands down the best ramen I’ve had in VT! I love all of the variety on the menu - we ordered the gyoza + takoyaki and it was also some of the best I’ve ever tasted. Super friendly people too :) Jason is awesome. Will definitely be returning!"
"This place is a true gem of a restaurant in the Western Colchester / New North End area. Unlike a lot of Asian restaurants in the area that seem to either repeat the same menu as other places, or are made of very cheap ingredients, the dishes from this Ji Bei Chuan tastes like they're made with a lot of love, freshness, and pride. The noodle consistency and quality is outstanding. And huge portions of the price!! Very happy to have them in the neighborhood as a delicious option."
"Great dining experience overall, love the Fish Maw soup base - perfect for warming up in winter!"
"JBC brings some variety to Colchester restaurant scene. Take out is very well organized with stackable bowls/dishes to separate the soup base from the noodles, meat, eggs, etc. The ramen soup base has a light flavor with maybe a hint of peanut oil ... Not sure exactly what it is as it is unique and doesn't seem like typical rich pork bone stock base. It's still tasty but not as rich of flavor. The soup dumplings and Taiwanese sausage were good appetizers."
"My family shared two bowls from here and it was nice. The flavors were good, but for me these dishes are all about the broth/soup base. I am a trained cook, and make stock a few times a month to have on hand, so I know what really good stock can taste like. While delicious, each soup we had seemed like it had slightly watery broth. Again, I'm ranking this at 4 stars, and that is a hard score for me to give. The reason they get that is for the take-out experience being a great one, and all of the toppings being fun. The soy egg was particularly good. That said, I wish the soup base had more body to them. A good soup base should be able to stand up on it's own, and I'm not sure these would be there. Still, we'd go here again, and try more options because we've only tried two items so far. I'm very curious about their array of fried chicken, and that will certainly be on our next order, except my partner is GF, so she won't get the full experience. Please patronize this business, because we need good restaurants in the NNE/Western Colchester to stick around and the first 5 years matter. I look forward to having their food again."
"This is a new takeout spot and I have ordered a few of their ramen dishes. They were very good and ready quickly! The guy running the counter was also kind. Takeout only. Would recommend."
